Rainbow cupcakes

These over the rainbow cupcakes are super easy to make! Anyone can make them. What you need is your favorite cake recipe, some frosting, mini marshmallows and Air head Xtremes. After you make and cool your cupcakes, you want to make your frosting. You can use already made or make your own. Use some sky blue food coloring for the sky blue color and put aside. I found it was easier to insert the Air head Xtremes and then put on the frosting. This way you can push the Air head Xtreme into the cupcake and it won't fall off. Once your rainbow Air head Xtremes are in the cupcakes you can now spread the frosting. Spread lightly and slowly. Make sure you frost under the rainbow and all around. Once you have completed this you can use mini marshmallows as I did in the photo below for clouds. You can use 3-5 on each side or as many as you like. They are super easy to make and the kids will love them.

Red, White and Blue Jell-o Layered Cake

This Jell-o cake is a must have for any cookout. This dessert will be a refreshing hit for all your guests.  I must warn you though, it is so refreshingly delicious that you might want to keep the entire thing for yourself!

So, lets begin. This Jell-o cake is not actually "cake". It is made up of 7 layers of Jell-o. Four of the layers are of Jell-o mold and three of the layers are made of a cream filling mold. The great thing about this Jell-o cake is that you can make it for any occasion. You can actually change the colors and make it part of your theme. The one I am showing here is for the 4th of July. I will be using red and blue Jell-o with the white cream layer to form the red, white and blue look.



Before you start you should know this is best made at least one day ahead. It does take several hours to make. Now don't be discouraged. The reason it takes so long is because you have to wait for each layer to form. Here is what you will need:

1 1/2 cups heavy cream
1 1/2 cups light cream
3 envelopes of unflavored (Knox) Gelatine
16 oz sour cream
1/2 cup cold water
1 1/4 cup sugar
4 packages of Jell-o gelatin of choice 
13x9x2 inch glass Pyrex or similar

Boil water for the Jell-o as directed on box. Mix with cold water and pour your first layer of Jell-o into Pyrex.  Place in refrigerator and let firm. You do not want to rush this layer. This layer is the base of your cake. If this layer is not firm your layered Jell-o cake will not come out nicely when you cut it. So, let it firm well. Meanwhile, make your Gelatine by sprinkling the 3 envelopes of Gelatine on the 1/2 cup of cold water. Let stand for a  minute. Place heavy cream. light cream and sugar in a pan over medium/low heat. Mix well and bring to boil. As soon as it starts to boil take off heat and whisk in sour cream. Then add Gelatine. Set aside and let cool. When your cream mixture has cooled and your Jell-o layer has firmed  you can start making your Jell-o layers. Add 1 1/2 cups of cream to the firm Jell-o layer in Pyrex. Place in refrigerator and let firm. Once your cream layer has firmed add your 2nd Jell-o layer and refrigerate. Continue this process until all layers are complete. Note you will have some extra cream. You may also have to warm it up it if cools too much and becomes chunky. Be sure not to place hot cream on Jell-o layer. It will melt the firm Jell-o. You should end with a Jell-o layer on top. 

Quick note on how to know if your layer has firmed. If it wiggles and is runny it  has not set yet. You can also try touching the Jell-o layer with the tip of your finger. Your finger should bounce right off when it is ready. If it is sticky it has not firmed well. Leave each layer in refrigerator until each layer has set and is nice and firm. This is key to this Jell-o cake. When you are ready to serve, cut into individual square pieces. Enjoy!

Hulk Marshmallow treats!

Here are my Incredible Hulk marshmallow treats! They are very easy to make and such a fun treat for anyone who loves marshmallows and chocolate!  What you will need is a bag of marshmallows, a bag of green candy melts, long sticks and a few crushed Oreo cookies. Have all your items ready and handy. Be sure to crush your Oreo cookies ahead of time and place in small bowl. In another bowl melt your candy melts as directed on package. Stick the marshmallows on stick and dip in melted chocolate. Dip top of marshmallow into crushed Oreo cookies and place upside down on wax or parchment paper. Let sit until chocolate has hardened. Continue this process until you make your desired amount of Incredible Hulk marshmallow treats. Once the chocolate has hardened you can flip and place in jar or anywhere you'd like. For the face, I used Sparkle decorating gel by Wilton. I do have to warn you though the faces will stick together and smudge. So if you want to use this make sure the faces do not touch each other. Also do not place in goody bags. The eyes and mouth will stick to bag and your Hulk will be ruined. Perhaps you can try regular black frosting instead of gel. Anyhow, here is what mine looked like. Avengers Cake with Justice league friends

I recently made this cake for my twin boys birthday who love the Avengers! I wanted it to be simple. So, I decided to make Captain America's shield on top. I then followed the Avengers theme on the sides of the cake, by making their symbols all around. I added a few of the Justice league symbols as well because we could not do without the Green Lantern, Superman and the Flash. Of course you can make any symbols you want. I once again used ready made fondant and added food coloring to make the colors I wanted. For the cake itself, you can use your favorite recipe or even a boxed cake. I went with a chocolate cake with a chocolate whipped filling. The boys loved it!

Buzz Lightyear and Woody Cake

Toy Story Themed Cakes


My Buzz Lightyear and Woody cakes were made for my twin boys! The expression on their faces when they saw these two were priceless! Again, I used fondant to decorate these two cakes by cutting out shapes and attaching them to the cake. I like to buy fondant in white and make my own colors. You can also find fondant in many colors. I use gel food coloring and mix it into the fondant. You knead it like you would bread. You do this for a while. You want to make sure that the color is unison and there is no streaking. Once you have your color you roll it out and cut out your shapes. If you like to plan ahead like I do, you can make the fondant a few days in advance. Place in the finished fondant colors in ziploc bags until you  are ready to use them. The day of decorating take them out, roll them out and you are ready to go.

Incredible Hulk Rice Krispie Treats

Incredible Hulk rice krispie treats. All you need is butter, marshmellows, rice krispies, green gel food coloring and some crushed Oreo cookies.

Max & Ruby Cake

This was a cake I made for my godson. He requested a Max and Ruby cake. My first thought was how am I going to do that? I did some research and found the characters. I printed a picture so I could see what they looked like. After making the cake and cooling it. The fun begins. Roll out your fondant and cut out the shapes and sizes you need. Decorate your cake to your liking.
